Oolong Shiro Gifu RYCATEA®
€15.00
Oolong tea is a semi-fermented tea. Initially Chinese, Oolong was a traditional tea produced through a unique process including withering under the strong sun and oxidation before curling and twisting. Most oolong teas, especially those of fine quality, involve unique tea plant cultivars that are exclusively used for particular varieties. The degree of fermentation can range from 8% to 85%, depending on the variety and production style. The spread of oolong tea in Japan begins in 1970 with the news that it is effective for slimming and beauty. It was taken up by the media in 1979 as being a favorite drink for beauty A style unique to Japan is born and the development of the outdoor market begins. Oolong tea will gain citizenship as a soft drink. Oolongs are the wide category of tea in between green and black, and through skilled, labor-intensive processing, a tea-maker can coax anything from buttery florals to deep chocolate to roasted nuts to tropical fruit out of a single batch of leaves. So, if you've been drinking tea for a while and are getting bored of your malty assays and your springy sencha, here's a basic introduction to the entire universe of tea. Oolong Shiro Gifu has overtones of chocolate and toasted almonds and can be drunk hot or cold.

Houjicha Shiro Hachiman Rycatea®
€15.00
Houjicha teas have a light to reddish brown appearance and are less astringent due to losing catechins during the high-temperature roasting process. The roasted flavors are extracted and dominate this blend: the roasting replaces the vegetative tones of standard green tea with a toasty, slightly caramel-like flavor. The roasting process used to make Houjicha also lowers the amount of caffeine in the tea. Because of its mildness, Houjicha is a popular tea to serve during an evening meal before or after going to sleep and is preferred by children and the elderly. When you drink hojicha for the first time, you might be surprised that it is a type of Japanese green tea, given its amber color. This roasted bancha releases an amazingly rich aroma that completely fills the room when brewed. Its flavor is light-bodied, without much astringency. Houjicha Shiro Hachiman is intense and tasty and can be drunk hot or cold.

Sencha Rycatea® Shiro Kumamoto
€16.00
Sencha is the most well-known variety of green tea, and the most popular kind in Japan. To make sencha, tea leaves are steamed within a few hours after harvest, thus stopping the oxidation process, then rolled into needles, thus making sure that the leaves’ natural green color is preserved. This process also helps the leaves retain their fragrance and components. Sencha Shiro Kumamoto is refreshing and light

Kukicha Shiro Okayama RYCATEA®
€16.00
Kukicha, or twig tea, also known as bōcha, is a Japanese blend made of stems, stalks, and twigs. It is available as a green tea or in more oxidized processing. It mostly comes from the processing of Sencha and Tencha when the stems and twigs are left behind. After the steaming and drying process, leaves are separated based on colors. Sencha is dark green leaves, and Kukicha has light green stems. These are separated either by labor or sorting machines. Kukicha has a unique flavor and aroma among teas, due to its being composed of parts of the tea plant that are excluded from most other teas. Regular Kukicha material comes from production of Sencha or Tencha. It also has a less bitter taste than Sencha and a more refreshing aroma, which is why it is preferred over many other green teas for daily intake. Kukicha Shiro Okayama is a pure classic Kukicha that can be drunk almost everyday

The Art of French Pâtisserie. Chapter 2: French Tarts & Tartlets
€19.00
Welcome to Chapter 2 of 'The Art of French Pâtisserie' collection. The tart is the ultimate test of a pâtissier’s technical foundation. More than any other pastry, it demands a perfect harmony between texture and flavor: a pâte that is buttery, crisp, and structurally sound, housing a filling that must be both visually arresting and sensorially balanced. In this second chapter, we move beyond the delicate petit four to explore the architecture of five iconic French tarts and tartlets. This collection honors the history of French baking while pushing the boundaries of modern ingredient functionality. We have deconstructed the traditional methods of the Tarte au Citron, the Tarte Bourdaloue, and other legendary staples, re-engineering them for the contemporary kitchen. Through these five recipes, we explore the challenges of "clean" formulation: achieving the snap of a gluten-free crust without wheat, the richness of a vegan crème without dairy, and the stability of a sugar-free ganache—all while maintaining the unmistakable elegance of the French tradition. Whether you are mastering the brittle crunch of a sugar-free crust or the velvet texture of a plant-based curd, these protocols are designed to provide you with the professional-grade consistency required for your own Maison. Each recipe serves as a laboratory, demonstrating how we can respect the history of our craft while actively shaping its future. Welcome to the technical heart of modern pâtisserie. Let us begin our work.
